Frozen kale and other dark leafy greens are a perfectly good stand-by for adding to soups or cooking as a side veg (but fresh is best).

Cavolo nero and kale leaves have a tough central stalk, which is usually too tough to eat raw or cooked. Simply hold the end of each stalk and pull the leafage off, or cut it out of cavolo nero. Pre-shredded kale usually has this tough inner stem still attached, so by the time you’ve got rid of those you might have well just shredded whole leaves from the start! You can still cook it with those stems, but they are likely to be annoyingly woody to eat.
